Sooji Thekua is a crispy, deep-fried sweet biscuit that is an appealing and popular variation of the traditional Bihari Thekua. It is often made for festivals like Chhath Puja or simply as a homemade, shelf-stable snack.

The key difference from the standard wheat-flour Thekua is the addition of Sooji (Semolina/Rava), which is either mixed in equal proportions with wheat flour (atta) or used as a smaller component.

The Texture Difference

The primary reason for adding sooji is to achieve a superior texture. The semolina grains swell during the deep-frying process, resulting in a distinctively crispier, crunchier, and more porous biscuit compared to the denser, often harder, traditional wheat-only version.

  • Main Ingredients: Wheat flour, Sooji (Semolina), Ghee, and either Powdered Sugar or Jaggery.

  • Flavor Profile: It retains the classic warm, earthy flavors from aromatic spices like fennel seeds (saunf) and cardamom, often enriched with grated coconut and dry fruits.

Because of its extra crunch, Sooji Thekua is highly regarded and often called Khasta Thekua (Flaky/Crisp Thekua).

    Thekua is surprisingly filling! It pairs perfectly with a cup of hot chai. The cardamom note really elevates the whole wheat and coconut blend. An excellent, hearty tea-time biscuit.
