Maida Thekua is a sweeter, more contemporary, and typically crunchier version of the classic Bihari snack. It is made by substituting the traditional whole wheat flour (atta) with Maida (All-Purpose Flour/Refined Flour), often combined with Sugar rather than jaggery.

Texture: The use of maida results in a lighter, much crispier, and more delicate texture compared to the dense, rustic chew of whole wheat thekua. Because of its extreme crispiness, it is very similar to an Indian cookie or a biscuit and is sometimes simply referred to as Khajuria or Khasta (meaning crispy).

Flavor Profile: While it still uses the classic flavorings like fennel seeds and cardamom, the maida base and inclusion of sugar (rather than jaggery) give it a cleaner, sweeter taste without the earthy, caramel notes of the traditional version.

Ingredients: The dough is prepared using maida, ghee (for richness), and sugar syrup or granulated sugar. It is often deep-fried to a light golden brown color.
