Description
Bajra Thekua is a crispy, traditional Indian sweet snack, often described as a healthy cookie or biscuit. It is a variation of the popular Thekua, a revered offering (prasad) during the Chhath Puja festival in Bihar, Jharkhand, and parts of Uttar Pradesh.
Unlike the traditional version made with wheat flour, Bajra Thekua is prepared using Bajra (Pearl Millet) flour, which is rich in fiber and offers added health benefits. The stiff dough is sweetened primarily with jaggery or a mix of jaggery and sugar, flavored with ingredients like cardamom and dry fruits, pressed into decorative shapes using a mold, and then deep-fried or sometimes baked until it achieves a characteristic golden-brown, crunchy texture.
